2-Ingredient Salsa Chicken

Seriously, an actual recipe seems superfluous. Combine 1-2 lbs of boneless, skinless chicken breasts and a jar of salsa in a pot and cook.

Crock Pot: High, 4hrs

Instant Pot: Poultry Setting, 30 min

Stove top: About an hour or until chicken is cooked through and almost falling apart.

I am obsessed with this dish and angry it took me so long to get into it. The amount of flavor that comes from opening a jar and simply pouring it in is ridiculous. It’s also pretty healthy, just be sure to find a version of salsa that’s low in sodium and has no preservatives.

Favorite Variations

Black Bean & Corn salsa: Chicken burritos (just add cheese & refried beans to some flour tortillas) or on top of brown rice with some guacamole* for a burrito bowl to kick Chipotle’s ass

Peach or Pineapple salsa: A summery sandwich on King’s Hawaiian buns

Tomato/Chipotle salsa: Chicken tacos (lettuce, cheese, you get it)

Any salsa: Nachos (one of my favorite quick & easy snacks), Top corn chips with cooked chicken & cheddar cheese, broil for about 3 minutes or until cheese is melted and add toppings of your choice

*BONUS MOM CHEAT: Wholly Guacamole has 100-calorie cups of guacamole (about $3.50 for a 4-pack and well worth it!). These are awesome if you’re counting calories or only need a bit at a time for a snack. No one wants brown guacamole in their fridge and these little packs are perfect for avoiding that problem. You don’t have to open more than you need.
