Easy Italian Beef

I love meals that take 5 minutes of effort and taste like hours. This Italian Beef recipe is crazy versatile, super easy, and can be made in an Instant Pot or Crock Pot. Depending on the size of your family, you can easily get 2-3 meals out of it, and not technically eat the same thing every time. Here it is:

1/2 cup white vinegar

1/3-1/2 cup of semi-dry to dry red wine

1/2 stick of butter (4 T.)

1 T. dried minced onion

2 tsp. garlic powder

1 tsp. red pepper flakes

8 or more mild banana pepper rings (jarred, and feel free to add some of the juice to the pot)

1 tsp. kosher salt

1/2 tsp. ground black pepper

2-3 lbs. beef chuck roast (you can sub a cheaper cut of beef roast, but it may need to cook longer)

  1. Throw it all in a crock pot or instant pot.
    1. Crock Pot: Cook on high for 4-6 hours
    2. Instant Pot: Beef/Stew Setting for 2-2 1/2 hours
  2. When time is up, shred the meat and chow down!

 

Variations:

My favorite is the Italian Beef Sandwich. Put the meat onto any kind of roll you like (I prefer hoagie rolls), and top with provolone and giardinierra (hot or mild, doesn’t matter). Bake at 400 degrees F for 10 minutes or until the cheese is gooey and the bread is nice and toasty.

Serve beef over baked or mashed potatoes for a hearty meal. (You can make them yourself or find a cheesy boxed version.)

My daughter likes this on a hamburger bun with sweet bbq sauce and sharp cheddar.

Make it quesadilla-worthy by mixing in a bit of chili powder & cumin to the leftovers.

Stir leftover beef into canned vegetarian stew or any other hearty soup. Heat and serve with breadsticks.

    1. Shernette I PROMISE you’ll love how quick you can get it throw it together. It also freezes well. I wait for it to cool completely and scoop into freezer bags. Thaw in the microwave and toss it on some bread for an easy lunch.
